  • 4 chicken pieces (legs, thighs, or breasts)
  • 1 cup gluten-free flour blend
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 eggs
  • 1/4 cup milk (or dairy-free alternative)
  • Oil for frying

Instructions

  1. In a large bowl, combine the gluten-free flour, salt, pepper, paprika, garlic powder, and onion powder. Mix well to evenly distribute the spices.
  2. In another bowl, whisk together the eggs and milk until smooth.
  3. Dip each piece of chicken first into the egg mixture, allowing any excess to drip off, then coat it thoroughly in the flour mixture.
  4. Heat oil in a deep pan over medium-high heat. To test if it’s ready, drop in a small pinch of flour; if it sizzles, you’re good to go!
  5. Carefully place the chicken pieces into the hot oil. Fry for about 5-7 minutes on each side, or until they are golden brown and cooked through (the internal temperature should reach 165°F).
  6. Once cooked, remove the chicken from the oil and place it on a plate lined with paper towels to drain the excess oil.

Notes

For extra crispiness, consider double coating the chicken. Use oils with a high smoke point for frying.
