Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Pecans or walnuts (optional)
  • Whole wheat flour (optional)
  • Almond or soy milk (optional)
  • Cinnamon or nutmeg (optional)

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until fully combined.
  3. In another bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid overmixing for the fluffiest texture.
  5. Lightly grease the waffle iron if necessary, then pour an appropriate amount of batter onto the center of the iron.
  6. Close the lid and cook until the waffles are golden brown and crispy, usually about 5 minutes. Keep an eye on the color.
  7. Carefully remove the waffles using a fork and serve with your favorite toppings.

Notes

For extra crispy waffles, preheat your waffle iron for an additional minute. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
