Greek Feta Roast Potatoes

Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, toss the potatoes with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast in the preheated oven for about 25–30 minutes or until golden and tender, stirring halfway through.
  6. Remove from the oven and sprinkle crumbled feta cheese over the hot potatoes.
  7. Return to the oven for an additional 5–10 minutes until the feta is slightly melted.
  8. Garnish with fresh parsley before serving.

Notes

For crispier potatoes, parboil potatoes for 5–7 minutes before roasting. Avoid overcrowding the pan for even crispiness.
