- 1 cup long-grain rice
- 2 cups vegetable or chicken broth
- 1 lemon (juice and zest)
- 2 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (such as parsley or dill) for garnish
Instructions
- In a pot, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant (about 1 minute).
- Add rice and stir for a couple of minutes to toast.
- Pour in the broth and bring to a boil.
- Reduce heat to low, cover, and simmer for about 18-20 minutes, or until rice is cooked.
- Remove from heat, add lemon juice and zest, and stir well.
- Season with salt and pepper to taste.
- Garnish with fresh herbs before serving.
Notes
Avoid overmixing the rice after adding the broth to prevent it from becoming mushy. Use freshly squeezed lemon juice for the best flavor.
