Greek Lemon Rice


Description

Ingredients

  • 1 cup long-grain rice
  • 2 cups vegetable or chicken broth
  • 1 lemon (juice and zest)
  • 2 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or dill) for garnish

Instructions

  1. In a pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Add rice and stir for a couple of minutes to toast.
  4. Pour in the broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 18-20 minutes, or until rice is cooked.
  6. Remove from heat, add lemon juice and zest, and stir well.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh herbs before serving.

Notes

Avoid overmixing the rice after adding the broth to prevent it from becoming mushy. Use freshly squeezed lemon juice for the best flavor.
