- 2 cups bell peppers, chopped
- 1 cup red onion, chopped
- 1 zucchini, sliced

Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken thighs, bell peppers, red onion, zucchini, and cherry tomatoes.
