Ingredients

- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup cooked white rice
- 1/2 cup sour cream
- 1/2 cup nacho cheese sauce
- 1/4 cup chipotle sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4 large flour tortillas
- Butter or oil for grilling (about 2 tbsp)
Instructions
- Heat a skillet over medium. Add the ground beef and brown, breaking it up until no pink remains (6–8 minutes). Drain grease.
- Return to the pan, add taco seasoning and 1/4 cup water, stir, and simmer for 3–5 minutes until saucy.
- Warm tortillas briefly on a skillet or microwave wrapped in a damp paper towel (20-30 seconds).
- Assemble each burrito: layer rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, and shredded cheeses on a warm tortilla, then roll tightly.
- Heat a clean skillet over medium-low and lightly butter. Place the burrito seam-side down on a bed of shredded cheese. Cook until the cheese forms a golden crust (3–4 minutes).
- Carefully flip and sprinkle more cheese on the skillet. Cook the other side until golden (another 3–4 minutes).
- Remove from skillet and let rest for 1 minute before slicing.
