Ingredients

  • 2 salmon fillets
  • 1 ripe avocado, sliced
  • 4 cups mixed greens (spinach, arugula, etc.)
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for garnish

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the salmon fillets with olive oil and season with salt and pepper.
  3. Place the salmon on the grill and cook for about 4-5 minutes on each side, or until cooked through and flaky.
  4. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss gently to coat.
  6. Once the salmon is grilled, flake it into large pieces and place on top of the salad. Add sliced avocado and garnish with fresh herbs.
