- 4 boneless, skinless chicken breasts
- 1 cup spinach, chopped
- 1 cup cream cheese, softened
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup heavy cream
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the grill to medium-high.
- In a bowl, combine spinach, cream cheese, mozzarella, sun-dried tomatoes, garlic powder, salt, and pepper. Mix until fully combined.
- Carefully cut a pocket in each chicken breast and generously stuff with the cheese mixture.
- Brush the stuffed chicken breasts with olive oil.
- Place the stuffed chicken on the grill and cook for 6-8 minutes on each side, or until the chicken is no longer pink inside.
- In a small saucepan, gently heat the heavy cream over low heat. Stir in any remaining cheese until melted and combined.
- Once grilled, place the chicken on a plate, drizzle with cream sauce, and garnish with fresh parsley.
Notes
Use a meat thermometer to ensure chicken reaches 165°F (75°C) to avoid dryness.
