Grilled Stuffed Chicken with Cream Sauce


Description

A succulent grilled chicken breast stuffed with a creamy blend of cheeses and fresh spinach, expertly charred and smothered in a rich cream sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup spinach, chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the grill to medium-high.
  2. In a bowl, combine spinach, cream cheese, mozzarella, sun-dried tomatoes, garlic powder, salt, and pepper. Mix until fully combined.
  3. Carefully cut a pocket in each chicken breast and generously stuff with the cheese mixture.
  4. Brush the stuffed chicken breasts with olive oil.
  5. Place the stuffed chicken on the grill and cook for 6-8 minutes on each side, or until the chicken is no longer pink inside.
  6. In a small saucepan, gently heat the heavy cream over low heat. Stir in any remaining cheese until melted and combined.
  7. Once grilled, place the chicken on a plate, drizzle with cream sauce, and garnish with fresh parsley.

Notes

Use a meat thermometer to ensure chicken reaches 165°F (75°C) to avoid dryness.
