- 1 cup pineapple chunks (fresh or canned)

- 1 green bell pepper, sliced

- 2 tablespoons soy sauce

- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- Salt and pepper to taste

Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix together the soy sauce, olive oil, brown sugar, garlic powder, salt, and pepper.
- Place the chicken thighs on a sheet pan and pour the sauce mixture over them.
- Add the pineapple, bell peppers, and onion to the pan, spreading them out around the chicken.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
- Garnish with chopped green onions before serving.
