Classic Spaghetti Aglio e Olio


Description

A simple yet flavorful Italian pasta dish made with garlic, olive oil, and chili flakes.


Ingredients

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • 100ml extra virgin olive oil
  • 1 tsp red pepper flakes
  • Fresh parsley, chopped
  • Salt, to taste
  • Grated parmesan cheese, for serving

Instructions

  1. Cook spaghetti according to package instructions in salted water until al dente.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat.
  3. Add sliced garlic and red pepper flakes, and sauté until garlic is golden, about 2 minutes.
  4. Drain pasta, reserving some cooking water.
  5. Add pasta to the pan with garlic oil, tossing to coat.
  6. If needed, add a bit of reserved pasta water for a saucier consistency.
  7. Stir in chopped parsley and season with salt.
  8. Serve warm, topped with grated parmesan cheese.

Notes

For added flavor, you can include some anchovies or substitute the spaghetti with another pasta of your choice.
