- 1 cup whole wheat flour
- 1/4 cup coconut sugar (for the batter)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/2 tsp vanilla extract

- Cooking spray (vegetable or avocado oil spray)
- 2 tbsp coconut sugar (for the coating)

Instructions
- In a mixing bowl, combine the whole wheat flour, 1/4 cup coconut sugar, baking powder, 1/4 tsp salt, and 1 tsp ground cinnamon.
- Add the unsweetened applesauce and vanilla extract, stirring until a soft dough forms.
- Preheat the air fryer to 350°F (175°C) for 3–4 minutes.
- Shape the dough into small bites (about 1-inch rounds) and place them on a plate, lightly spray each bite with cooking spray.
- Arrange the bites in a single layer in the air fryer basket and air fry for about 5–7 minutes, until golden brown and springy to the touch.
- While still warm, toss the churro bites in the cinnamon-coconut sugar mixture to coat. Serve warm.
Notes
Store in an airtight container for 1–2 days at room temperature, or refrigerate for up to 4–5 days. Reheat in the air fryer to restore crispness.
