A comforting baked oatmeal that combines the rich taste of chocolate with healthy ingredients for a wholesome breakfast or snack.

- 2 1/4 cups old-fashioned rolled oats
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 ripe banana, mashed (about 1/2 cup)
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1.5 cups milk (unsweetened soy milk or other milk alternatives)
- 2/3 cup dark chocolate chips (plus more for topping)
Instructions
- Preheat the oven to 375°F (190°C) and spray an 8×8-inch pan with cooking spray.
- In a large bowl, whisk together the rolled oats, cocoa powder, baking powder, and sea salt.
- In a separate bowl, combine the mashed banana, maple syrup, vanilla extract, and milk. Stir until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the dark chocolate chips.
- Transfer the batter to the prepared baking dish and spread evenly. Top with additional chocolate chips if desired.
- Bake for 25–30 minutes until edges are set and the center springs back when pressed.
- Cool in the pan for at least 15 minutes before slicing into 9 squares.
Notes
For variations, try adding peanut butter, nuts, or using different types of milk.
