Healthy Carrot Cake Muffins


Description

Delicious and nutritious muffins infused with warm spices and the natural sweetness of carrots, perfect for breakfast or a snack.


Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup grated carrots
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts or raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.
  3. In another bowl, whisk together the honey (or maple syrup), unsweetened applesauce, eggs, and vanilla extract until well blended.
  4. Combine the wet and dry ingredients, stirring gently until just incorporated. Be careful not to overmix!
  5. Fold in the grated carrots and walnuts or raisins (if using) for added texture and flavor.
  6. Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full to allow for rising.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra moisture and flavor, use freshly grated carrots. These muffins can be stored in an airtight container at room temperature for up to 3 days.
