- 2 sweet potatoes

Instructions
- Preheat the oven to 400°F (200°C).
- Peel and cube the sweet potatoes, then toss them in olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender.
- While the potatoes roast, cook the rice according to package instructions, using a pinch of salt in the water for added flavor.
- Season the chicken breasts with olive oil, salt, pepper, and any additional seasonings you prefer. Cook them in a skillet over medium heat for about 6-7 minutes per side until cooked through (the internal temperature should reach 165°F/75°C).
- Once everything is cooked, assemble your bowl by placing rice at the bottom, topped with roasted sweet potatoes, sliced chicken, and any additional veggies.
