  • 2 cups cooked, shredded chicken
  • 1 can white beans (such as cannellini or great northern), drained and rinsed
  • 1 cup chicken broth
  • 1 cup milk or a non-dairy alternative
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced green chilies
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional toppings: Greek yogurt, cilantro, avocado, lime wedges

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic; sauté until softened.
  2. Stir in the shredded chicken, white beans, chicken broth, milk, diced green chilies, cumin, chili powder, salt, and pepper.
  3. Bring to a simmer and cook for 15-20 minutes, allowing the flavors to meld.
  4. For a slower method, transfer to a slow cooker and cook on low for 4-6 hours.
  5. For an Instant Pot, cook on high pressure for 10 minutes and quick release.
  6. Serve warm, topped with optional Greek yogurt, cilantro, avocado, and lime wedges.
