- 1 1/2 cups (180 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- 1/2 cup (113 g) unsalted butter, softened
- 2 large eggs
- 1/2 cup (120 ml) milk (whole or 2%)
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 2 cups (about 240 g) powdered sugar (for frosting)
- 2–3 tablespoons milk (for frosting)
- Pastel food coloring (gel preferred)
- Hello Kitty cake decorations, edible bows, sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- Cream together softened butter and granulated sugar until light and fluffy, about 2–3 minutes.
- Add eggs one at a time, mixing well after each addition. Stir in milk and vanilla extract.
- In a separate bowl, whisk together flour and baking powder.
- Gradually add dry ingredients to the wet mixture, mixing until just combined.
- Fill each cupcake liner about 2/3 full with batter.
- Bake for 18–20 minutes, or until a toothpick comes out clean.
- Let cupcakes cool in the pan for 5–10 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat together powdered sugar and milk until smooth. Color with gel food coloring.
- Frost cooled cupcakes and decorate with Hello Kitty decorations.
Notes
Use room-temperature ingredients for better mixing. Avoid overmixing to keep cupcakes tender.
