Herb & Lemon Roasted Chicken

Ingredients

  • 1 whole chicken (about 45 pounds)
  • 2 lemons, halved
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
  3. Rub this mixture all over the chicken, coating it inside and out.
  4. Squeeze the juice of one lemon half over the chicken, and place both lemon halves inside the cavity.
  5. Place the chicken in a roasting pan and roast for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 10-15 minutes before carving to allow the juices to redistribute. Serve with pan juices for added flavor.

Notes

Don’t overmix the herb rub to maintain texture. Test doneness with a meat thermometer at the thickest part of the thigh. For extra crispy skin, pat the chicken dry before applying the herb rub.
