- 1 whole chicken (about 4–5 pounds)
- 2 lemons, halved
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
- Rub this mixture all over the chicken, coating it inside and out.
- Squeeze the juice of one lemon half over the chicken, and place both lemon halves inside the cavity.
- Place the chicken in a roasting pan and roast for about 1 hour and 20 minutes or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving to allow the juices to redistribute. Serve with pan juices for added flavor.
Notes
Don’t overmix the herb rub to maintain texture. Test doneness with a meat thermometer at the thickest part of the thigh. For extra crispy skin, pat the chicken dry before applying the herb rub.
