High Protein Creamy Beef Pasta


Description

A comforting and protein-packed creamy beef pasta that’s quick and easy to prepare for weeknight dinners.


Ingredients

  • 8 oz (about 227 g) penne pasta
  • 1 lb (454 g) lean ground beef (90/10 recommended)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz / 425 g) diced tomatoes (with juices)
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt (nonfat or 2% depending on preference)
  • 1/4 cup grated Parmesan cheese (~22 g)
  • 1 tbsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish
  • 1 tbsp olive oil (for cooking)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3–4 minutes until translucent and slightly golden.
  3. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  4. Add the ground beef, breaking it up with a spoon. Cook for 6–8 minutes until browned and cooked through. Season with salt, pepper, and Italian seasoning.
  5. Pour in the diced tomatoes and beef broth. Stir to combine and bring to a gentle simmer for 4–5 minutes.
  6. Reduce heat to low. Stir in Greek yogurt and grated Parmesan until the sauce is creamy. If too thick, add reserved pasta water to reach desired consistency.
  7. Add the cooked penne to the skillet and toss until coated in the creamy beef sauce. Warm together for 1–2 minutes.
  8. Serve garnished with chopped fresh basil or parsley and an extra sprinkle of Parmesan if desired.

Notes

To prevent yogurt from curdling, temper it by stirring a few spoons of hot sauce into it before adding to the skillet, and keep the heat low.
