Description

Warm and tender pancake bites that are high in protein, perfect for busy mornings or post-workout fuel.


Ingredients

Scale
  • 1 cup cottage cheese
  • 1/2 cup rolled oats
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • Pinch of salt
  • Cooking spray or oil for the pan
  • Optional: 1 scoop protein powder, maple syrup, mashed banana, or unsweetened applesauce

Instructions

  1. In a blender or food processor, combine cottage cheese, rolled oats, eggs, vanilla extract, baking powder, and a pinch of salt. Blend until smooth.
  2. Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or oil.
  3. Pour small amounts of batter (about 1–2 tablespoons) onto the skillet, spaced apart. Cook until bubbles form and edges look set, about 2–3 minutes.
  4. Flip carefully and cook for another 1–2 minutes until golden brown and set inside.
  5. Transfer to a plate and serve warm.

Notes

Can be stored in an airtight container for 3–4 days or frozen for up to 2 months. Reheat and enjoy warm.
