- ¾ cup unsweetened cocoa powder

- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 3 ½ cups powdered sugar
- ½ cup unsweetened cocoa powder (for frosting)
- ½ cup whole milk (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- Chocolate shavings (optional garnish)
- Fresh mint leaves (optional garnish)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.
- Add in the eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed for 2 minutes until fully combined and smooth.
- Carefully stir in the boiling water. The batter will be thin, but this ensures a moist cake.
- Pour the batter evenly into the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- To prepare the frosting, beat the softened butter until creamy. Gradually add powdered sugar and cocoa powder, alternating with milk until desired consistency. Stir in vanilla extract.
- Once cakes are cool, spread frosting on one layer, place the second layer on top, and frost the top and sides of the cake.
- Garnish with chocolate shavings or fresh mint leaves if desired.
