Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ½ cup unsalted butter, chilled and cut into small cubes
  • ½ cup cold water (or more as needed)
  • 1 teaspoon vanilla extract (optional)
  • 2 cups fresh or canned fruit (apples, peaches, cherries), chopped
  • ½ cup granulated sugar (adjust based on sweetness of fruit)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice (optional)
  • 1 teaspoon ground cinnamon (optional, for spiced fillings)
  • Vegetable oil or sunflower oil for frying
  • Powdered sugar for dusting

Instructions

  1. Make the Dough: In a large bowl, mix the flour, sugar, salt, and baking powder. Incorporate the butter using a pastry cutter or your fingers until it resembles coarse crumbs. If using vanilla extract, add it now. Gradually mix in the cold water until the dough forms.
  2. Knead the Dough: Transfer the dough to a floured surface and gently knead for a few minutes until smooth.
  3. Chill: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm it up.
  4. Prepare the Fruit Filling: In a saucepan, combine the fruit, sugar, cornstarch, and optional lemon juice and cinnamon. Cook over medium heat until thickened (about 10 minutes). Allow cooling.
  5. Roll Out the Dough: Once chilled, roll the dough to about ⅛-inch thickness on a floured surface.
  6. Cut the Dough: Use a round cutter or glass to cut circles, about 4-5 inches in diameter.
  7. Fill the Pies: Spoon 1-2 tablespoons of cooled filling into the center of each circle.
  8. Seal the Pies: Fold the dough over the filling, pressing the edges to seal. Crimp with a fork to ensure closure.
  9. Heat the Oil: In a pan, heat 2 inches of oil to 350°F (175°C).
  10. Fry the Pies: Carefully fry the pies in batches, 2-3 minutes per side, until golden brown.
  11. Drain: Place fried pies on paper towels to drain excess oil.
  12. Serve: Let cool slightly and dust with powdered sugar before serving.

Notes

Fried pies are best enjoyed warm. Can be served with vanilla ice cream or coffee.
