- Vegetable oil or sunflower oil for frying
- Powdered sugar for dusting
Instructions
- Make the Dough: In a large bowl, mix the flour, sugar, salt, and baking powder. Incorporate the butter using a pastry cutter or your fingers until it resembles coarse crumbs. If using vanilla extract, add it now. Gradually mix in the cold water until the dough forms.
- Knead the Dough: Transfer the dough to a floured surface and gently knead for a few minutes until smooth.
- Chill: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm it up.
- Prepare the Fruit Filling: In a saucepan, combine the fruit, sugar, cornstarch, and optional lemon juice and cinnamon. Cook over medium heat until thickened (about 10 minutes). Allow cooling.
- Roll Out the Dough: Once chilled, roll the dough to about ⅛-inch thickness on a floured surface.
- Cut the Dough: Use a round cutter or glass to cut circles, about 4-5 inches in diameter.
- Fill the Pies: Spoon 1-2 tablespoons of cooled filling into the center of each circle.
- Seal the Pies: Fold the dough over the filling, pressing the edges to seal. Crimp with a fork to ensure closure.
- Heat the Oil: In a pan, heat 2 inches of oil to 350°F (175°C).
- Fry the Pies: Carefully fry the pies in batches, 2-3 minutes per side, until golden brown.
- Drain: Place fried pies on paper towels to drain excess oil.
- Serve: Let cool slightly and dust with powdered sugar before serving.
