- 1/2 cup water
- 2 large egg whites, at room temperature
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- In a small saucepan, combine the granulated sugar and water. Stir over medium heat until the sugar dissolves.
- Bring the mixture to a boil and cook without stirring until the syrup reaches a full boil and becomes clear.
- Meanwhile, in a clean mixing bowl, beat the room-temperature egg whites with the cream of tartar until soft peaks form.
- With the mixer running on medium-high, slowly and carefully pour the hot sugar syrup into the beaten egg whites in a thin, steady stream.
- Continue beating until the mixture becomes cool to the touch, glossy, and thick with stiff peaks (5–8 minutes).
- Stir in the vanilla extract (or other flavorings).
- Use immediately or transfer to an airtight container and cool completely before sealing.
Notes
For added stability and texture variations, consider using light corn syrup or substituting egg whites with aquafaba for a vegan option.
