Ingredients

  • 2 cups rolled oats
  • 1 cup mixed nuts (e.g., almonds, walnuts)
  • 1 cup dried fruit (e.g., raisins, cranberries)
  • 1/2 cup honey or maple syrup
  • 1/4 cup nut butter (e.g., almond butter, peanut butter)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large bowl, combine oats, mixed nuts, and dried fruit.
  3. In a small saucepan over low heat, melt together honey, nut butter, vanilla extract, and a pinch of salt until smooth.
  4. Pour the nut butter mixture over the dry ingredients and mix until everything is coated well.
  5. Spread the mixture evenly in the prepared baking dish, pressing down firmly to compact it.
  6. Bake for 20-25 minutes or until golden brown.
  7. Allow to cool completely in the pan before slicing into bars.

Notes

Avoid overmixing to keep the bars chewy. Check for doneness by looking for a light golden hue at the edges.
