These no-bake Star Crunch Cookies are chewy and crunchy, made with peanut butter, oats, and cocoa for a delightful treat.

- 2 cups rolled oats
- 1 cup natural, unsalted peanut butter
- 1/2 cup unsweetened cocoa powder
- 1/2 cup pure maple syrup
- 1 tsp pure vanilla extract
Instructions
- Line a baking sheet with parchment paper or use a silicone mat.
- In a medium mixing bowl, stir together the peanut butter and maple syrup until smooth.
- Add vanilla extract and mix.
- Sift in the cocoa powder and stir until combined.
- Add the rolled oats and fold gently until all oats are coated.
- Use a spoon or cookie scoop to portion the dough and place on the prepared sheet.
- Refrigerate for 30–45 minutes until set.
- Serve once firm and store in an airtight container.
