Honey Buttercream Cornbread Cookies


Description

Delightful cookies combining the sweetness of honey and the fluffy texture of cornbread, topped with rich honey buttercream frosting.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup honey
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1/4 cup honey (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
  2. In a bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, beat the softened butter and honey until creamy.
  4. Add in the eggs, milk, and vanilla; mix well until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined (do not overmix).
  6. Drop tablespoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for about 12-15 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. For the buttercream, beat the softened butter, powdered sugar, and honey until light and fluffy.
  9. Once the cookies are cool, frost them with the honey buttercream and serve.

Notes

Serve warm, or slightly toasted with extra honey on top. Allow cookies to cool before frosting.
