Delightful cookies combining the sweetness of honey and the fluffy texture of cornbread, topped with rich honey buttercream frosting.

- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup honey
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar
- 1/4 cup honey (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
- In a bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, beat the softened butter and honey until creamy.
- Add in the eggs, milk, and vanilla; mix well until combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined (do not overmix).
- Drop tablespoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for about 12-15 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- For the buttercream, beat the softened butter, powdered sugar, and honey until light and fluffy.
- Once the cookies are cool, frost them with the honey buttercream and serve.
Notes
Serve warm, or slightly toasted with extra honey on top. Allow cookies to cool before frosting.
