- 2 medium heads of cauliflower, cut into florets (about 8–10 cups)
- 1/4 cup (60 ml) olive oil
- 1/4 cup (60 ml) honey
- 2 tablespoons curry powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons chopped fresh cilantro (for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, whisk together the olive oil, honey, curry powder, garlic powder, salt, black pepper, and cayenne pepper until smooth.
- Add the cauliflower florets and toss until every floret is evenly coated.
- Spread the coated cauliflower in a single layer on the baking sheet.
- Roast for 25–30 minutes, stirring once halfway through.
- The cauliflower is done when tender with golden-brown caramelized edges.
- Remove from the oven, let cool for a few minutes, and garnish with chopped cilantro before serving.
