- 1 pound chicken breast, sliced
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon chili paste
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chicken slices and cook until browned and cooked through, about 5-7 minutes.
- Stir in the bell pepper, onion, garlic, and ginger; continue to stir-fry for another 3-4 minutes.
- In a small bowl, whisk together soy sauce, rice vinegar, and chili paste. Pour over the chicken and vegetables, stirring well.
- Cook for an additional 2 minutes, seasoning with salt and pepper to taste.
- Serve hot, garnished with sliced green onions.
