Description

A vibrant stir-fry dish from Hunan province, combining tender chicken with crunchy vegetables and a savory, spicy sauce.


Ingredients

  • 1 pound chicken breast, sliced
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili paste
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken slices and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the bell pepper, onion, garlic, and ginger; continue to stir-fry for another 3-4 minutes.
  4. In a small bowl, whisk together soy sauce, rice vinegar, and chili paste. Pour over the chicken and vegetables, stirring well.
  5. Cook for an additional 2 minutes, seasoning with salt and pepper to taste.
  6. Serve hot, garnished with sliced green onions.

Notes

Pair with fluffy steamed rice or stir-fried noodles. Store leftovers in an airtight container for up to 3 days in the refrigerator.
