Italian Beef Vegetable Soup

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 1 cup green beans, trimmed
  • 1 cup potatoes, diced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat, using a spoon to break it apart. Drain excess fat.
  2. Add the chopped onion, sliced carrots, and celery to the pot; sauté until the vegetables are softened, about 5–7 minutes.
  3. Stir in the diced tomatoes, beef broth, green beans, diced potatoes, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30–40 minutes until the vegetables are tender.
  5. Adjust seasoning to taste and serve hot.

Notes

For a richer flavor, consider adding a splash of red wine while sautéing the vegetables. You can enhance the soup the next day as flavors deepen.
