- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 cup green beans, trimmed
- 1 cup potatoes, diced
- 1 tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- In a large pot, brown the ground beef over medium heat, using a spoon to break it apart. Drain excess fat.
- Add the chopped onion, sliced carrots, and celery to the pot; sauté until the vegetables are softened, about 5–7 minutes.
- Stir in the diced tomatoes, beef broth, green beans, diced potatoes, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 30–40 minutes until the vegetables are tender.
- Adjust seasoning to taste and serve hot.
Notes
For a richer flavor, consider adding a splash of red wine while sautéing the vegetables. You can enhance the soup the next day as flavors deepen.
