Italian Sausage with Peppers and Onions

Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 teaspoon dried basil
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced onions and cook until translucent, about 3-4 minutes.
  3. Add the sliced bell peppers and minced garlic; sauté until the peppers are softened, approximately 5-7 minutes.
  4. Push the vegetables to the side of the skillet and add the sausages.
  5. Cook the sausages until browned and cooked through (about 10-12 minutes).
  6. Season the mixture with salt, black pepper, dried basil, and fresh parsley.
  7. Serve hot, either in a bun or on a plate with vegetables.

Notes

For a vegan version, substitute Italian sausage with plant-based sausage. You can add mushrooms or zucchini for extra vegetables.
