- 1 pound Italian sausage (mild or spicy)
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and black pepper to taste
- 1 teaspoon dried basil
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced onions and cook until translucent, about 3-4 minutes.
- Add the sliced bell peppers and minced garlic; sauté until the peppers are softened, approximately 5-7 minutes.
- Push the vegetables to the side of the skillet and add the sausages.
- Cook the sausages until browned and cooked through (about 10-12 minutes).
- Season the mixture with salt, black pepper, dried basil, and fresh parsley.
- Serve hot, either in a bun or on a plate with vegetables.
Notes
For a vegan version, substitute Italian sausage with plant-based sausage. You can add mushrooms or zucchini for extra vegetables.
