- 4 chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup chicken broth
- 1 cup white wine
- 2 tablespoons tomato paste
- 1 tablespoon Dijon mustard
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken thighs with salt and pepper and brown them in the skillet for about 5 minutes on each side. Remove the chicken and set aside.
- In the same skillet, add the chopped onion and garlic; sauté until softened.
- Add mushrooms and cook until they begin to brown.
- Stir in chicken broth, white wine, tomato paste, Dijon mustard, and thyme. Return the chicken to the skillet.
- Bring to a simmer, cover, and cook for about 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
For a non-alcoholic version, replace white wine with additional chicken broth. This dish pairs beautifully with mashed potatoes or al dente noodles.
