JB’s Hunter’s Chicken


Description

A hearty dish featuring browned chicken thighs in a rich sauce of white wine and herbs, paired with earthy mushrooms and caramelized onions.


Ingredients

  • 4 chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup white wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Dijon mustard
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and brown them in the skillet for about 5 minutes on each side. Remove the chicken and set aside.
  3. In the same skillet, add the chopped onion and garlic; sauté until softened.
  4. Add mushrooms and cook until they begin to brown.
  5. Stir in chicken broth, white wine, tomato paste, Dijon mustard, and thyme. Return the chicken to the skillet.
  6. Bring to a simmer, cover, and cook for about 25-30 minutes or until the chicken is cooked through.
  7. Garnish with fresh parsley before serving.

Notes

For a non-alcoholic version, replace white wine with additional chicken broth. This dish pairs beautifully with mashed potatoes or al dente noodles.
