Juicy Pineapple Heaven Cake

Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar (granulated)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, well-drained
  • For the glaze:
  • 1/2 cup icing (powdered) sugar
  • 2 tablespoons pineapple juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9-inch round cake pan.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a large bowl, cream butter and sugar until light and fluffy.
  5. Beat in the eggs one at a time, then add vanilla extract.
  6. Gently fold in sour cream.
  7. Gradually mix in dry ingredients until smooth.
  8. Fold in the crushed pineapple.
  9. Pour the batter into the prepared pan and bake for 30–35 minutes.
  10. While baking, whisk together the powdered sugar and pineapple juice for the glaze.
  11. Allow the cake to cool before glazing.

Notes

For lower calories, substitute light sour cream and reduce sugar slightly.
