- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup white sugar (granulated)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 cup crushed pineapple, well-drained
- For the glaze:
- 1/2 cup icing (powdered) sugar
- 2 tablespoons pineapple juice
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla extract.
- Gently fold in sour cream.
- Gradually mix in dry ingredients until smooth.
- Fold in the crushed pineapple.
- Pour the batter into the prepared pan and bake for 30–35 minutes.
- While baking, whisk together the powdered sugar and pineapple juice for the glaze.
- Allow the cake to cool before glazing.
Notes
For lower calories, substitute light sour cream and reduce sugar slightly.
