- 1/2 cup (approx. 128 g) unsweetened peanut butter or almond butter
- 1/4 cup (56 g) unsalted butter, melted
- 1/4 cup erythritol or preferred keto sweetener (adjust to taste)
- 1 teaspoon vanilla extract
Instructions
- In a mixing bowl, combine softened cream cheese, peanut butter (or almond butter), melted butter, erythritol, and vanilla extract.
- Mix until smooth and well combined; use an electric mixer for the creamiest result.
- Using a tablespoon or small cookie scoop, form the mixture into small balls and place them on a parchment-lined tray.
- Refrigerate for about 30 minutes, or until firm.
- Transfer to an airtight container and store in the fridge.
- Enjoy within the recommended timeframes.
