Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.
- In a separate bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
- Beat in the egg, vanilla extract, lemon juice, and lemon zest until everything is well combined.
- Gradually mix in the dry ingredients until just incorporated—avoid overmixing to keep the cookies tender.
- Drop tablespoon-sized spoonfuls of cookie dough onto the prepared baking sheet, making a small indentation in the center of each cookie.
- Fill each indentation with a small amount of blueberry sauce.
- Bake for 10-12 minutes or until the edges are lightly golden and the centers are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
