Lemon Garlic Butter Chicken Thighs


Description

Comforting and flavorful chicken thighs seared and baked in a lemon garlic butter sauce, served with crisp green beans.


Ingredients

  • 4 chicken thighs (about 1 per person)
  • 2 cups green beans, trimmed
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice (about 1 lemon)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Position a rack in the center.
  2. Heat an oven-safe skillet over medium heat and melt 2 tablespoons of the butter.
  3. Add the minced garlic and sauté for about 30–45 seconds until fragrant — do not let it brown.
  4. Season the chicken thighs generously with salt and pepper on both sides, then add them to the skillet.
  5. Sear the chicken 4–5 minutes per side until golden brown.
  6. Add the green beans to the skillet and pour in the lemon juice and remaining 2 tablespoons of butter.
  7. Transfer the skillet to the oven and bake for 20–25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven, let the chicken rest for 5 minutes, and garnish with chopped fresh parsley before serving.

Notes

For lighter options, use skinless thighs and reduce butter. For richer results, keep the full butter and sear with skin-on thighs.
