Description
Comforting and flavorful chicken thighs seared and baked in a lemon garlic butter sauce, served with crisp green beans.

- 4 chicken thighs (about 1 per person)
- 2 cups green beans, trimmed
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice (about 1 lemon)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Position a rack in the center.
- Heat an oven-safe skillet over medium heat and melt 2 tablespoons of the butter.
- Add the minced garlic and sauté for about 30–45 seconds until fragrant — do not let it brown.
- Season the chicken thighs generously with salt and pepper on both sides, then add them to the skillet.
- Sear the chicken 4–5 minutes per side until golden brown.
- Add the green beans to the skillet and pour in the lemon juice and remaining 2 tablespoons of butter.
- Transfer the skillet to the oven and bake for 20–25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from the oven, let the chicken rest for 5 minutes, and garnish with chopped fresh parsley before serving.
Notes
For lighter options, use skinless thighs and reduce butter. For richer results, keep the full butter and sear with skin-on thighs.
