- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 cup vegetable or chicken broth
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the orzo in salted boiling water according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp and cook until pink and opaque, about 3-4 minutes.
- Stir in the broth, lemon juice, and lemon zest. Bring to a simmer.
- Add the halved cherry tomatoes and cooked orzo to the skillet. Stir to combine and cook for an additional 2-3 minutes until evenly heated.
- Season with salt, pepper, and chopped parsley before serving.
