  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 cup vegetable or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the orzo in salted boiling water according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the shrimp and cook until pink and opaque, about 3-4 minutes.
  5. Stir in the broth, lemon juice, and lemon zest. Bring to a simmer.
  6. Add the halved cherry tomatoes and cooked orzo to the skillet. Stir to combine and cook for an additional 2-3 minutes until evenly heated.
  7. Season with salt, pepper, and chopped parsley before serving.

Notes

For freshness, use fresh shrimp if possible. Squeeze extra lemon juice before serving for enhanced flavor.
