Ingredients

- 2 cups cooked turkey, shredded
- 1 cup cooked rice
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 lemon, juiced
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat.
- Add the chopped onion, diced carrots, and celery. Sauté until the onions are translucent and the vegetables are tender, about 5-7 minutes.
- Pour in the chicken broth, bringing it to a boil.
- Stir in the shredded turkey and cooked rice. Reduce the heat and let it simmer for about 10 minutes to combine flavors.
- Squeeze in the lemon juice, and stir in thyme, salt, and pepper to taste.
- Remove from heat and serve hot, garnished with fresh parsley.
Notes
For a vegetarian version, substitute turkey with cooked chickpeas or tofu. For additional fiber, use brown rice instead of white.
