Lemony Turkey Rice Soup

Ingredients

  • 2 cups cooked turkey, shredded
  • 1 cup cooked rice
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 lemon, juiced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion, diced carrots, and celery. Sauté until the onions are translucent and the vegetables are tender, about 5-7 minutes.
  3. Pour in the chicken broth, bringing it to a boil.
  4. Stir in the shredded turkey and cooked rice. Reduce the heat and let it simmer for about 10 minutes to combine flavors.
  5. Squeeze in the lemon juice, and stir in thyme, salt, and pepper to taste.
  6. Remove from heat and serve hot, garnished with fresh parsley.

Notes

For a vegetarian version, substitute turkey with cooked chickpeas or tofu. For additional fiber, use brown rice instead of white.
