Little Gem, Griddled Zucchini & Feta Shake-Up Salad


Description

A delightful summer salad bursting with the crispness of Little Gem lettuce, smoky grilled zucchini, and creamy feta cheese.


Ingredients

  • 1 head of Little Gem lettuce
  • 2 medium courgettes (zucchini)
  • 100g feta cheese
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh herbs (optional, e.g., mint or parsley)
  • Toasted pine nuts or walnuts (optional)
  • Cherry tomatoes (optional)
  • Balsamic glaze (optional)

Instructions

  1. Heat a grill pan over medium-high heat.
  2. Slice the courgette into thin rounds, about 1/4 inch thick.
  3. Brush the courgette pieces with olive oil, and generously season with salt and pepper.
  4. Grill the courgette for about 2-3 minutes on each side until they are charred and tender.
  5. In a large bowl, combine the Little Gem lettuce leaves and the grilled courgette.
  6. Crumble the feta cheese over the top.
  7. Drizzle with additional olive oil and freshly squeezed lemon juice, adding fresh herbs if desired.
  8. Toss gently to combine flavors, and serve immediately for the best taste.

Notes

For best results, grill zucchini in batches if necessary to avoid overcrowding. Store leftovers in an airtight container in the fridge for up to 3 days.
