Loaded Butterscotch Cheesecake


Description

A decadent butterscotch cheesecake topped with a warm drizzle, perfect for celebrations and cozy gatherings.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 24 oz cream cheese, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 1 cup butterscotch chips
  • 1/2 cup butterscotch chips for topping
  • 2 tbsp heavy cream

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until evenly coated.
  3. Press the mixture firmly into the bottom of the prepared pan.
  4. Bake for 8-10 minutes, then remove and let cool.
  5. In a large mixing bowl, beat the softened cream cheese and brown sugar together until smooth.
  6. Add eggs one at a time, mixing well after each addition. Scrape down the bowl and mix until incorporated.
  7. Stir in sour cream and vanilla extract until fully combined.
  8. Fold in butterscotch chips evenly.
  9. Pour the cheesecake batter over the cooled crust and smooth the top.
  10. Wrap the outside of the pan with aluminum foil and place it in a large roasting pan. Pour hot water into the roasting pan halfway up the sides of the springform pan.
  11. Bake for 55-65 minutes until the edges are set but the center jiggles slightly.
  12. Turn off the oven, leaving the cheesecake inside with the door slightly open for 1 hour.
  13. Let cool completely before refrigerating for at least 6 hours or overnight.
  14. In a microwave-safe bowl, combine butterscotch chips and heavy cream. Microwave until smooth.
  15. Let cool slightly and drizzle over the chilled cheesecake before serving.

Notes

Best stored in an airtight container. This cheesecake pairs well with coffee or vanilla ice cream.
