- 4 medium potatoes, diced
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 cup salsa
- 1 cup chopped green onions
- 1 avocado, diced
- Salt and pepper to taste
- Olive oil (about 1–2 tablespoons)
Instructions
- Preheat the oven to 425°F (220°C).
- Toss the diced potatoes with olive oil, salt, and pepper, then spread them in a single layer on a baking sheet.
- Bake for about 25–30 minutes, tossing once halfway through, or until potatoes are crispy and golden.
- While potatoes roast, heat a skillet over medium heat and cook the ground beef until browned and cooked through. Drain excess fat if desired. Add taco seasoning and follow package instructions.
- When potatoes are done, divide them among bowls to form a base layer.
- Top each bowl with seasoned beef, shredded cheese, dollops of sour cream, salsa, chopped green onions, and diced avocado.
- Serve immediately and enjoy your hearty meal!
