Description

Delicious low-carb snacks made with cheddar and roasted broccoli, perfect for any occasion.


Ingredients

  • 2 cups broccoli florets, finely chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the chopped broccoli, shredded cheddar, almond flour, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Scoop the mixture onto the prepared baking sheet, forming small rounds about 1 to 1.5 tablespoons each (you should get roughly 12 rounds). Press each slightly so the top is flat and the edges are compact.
  4. Bake in the preheated oven for 15–20 minutes, or until the edges are golden brown and the centers are set.
  5. Remove from the oven and let cool slightly before serving. Enjoy as a snack or appetizer!

Notes

For best results, finely chop the broccoli to help bind the rounds together. For variation, try using different cheeses or adding spices.
