- 1 cup jasmine rice
- 2 cups water
- 2 chicken breasts (about 1 pound), diced
- 1 ripe mango, peeled and sliced
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 small onion, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a saucepan, combine jasmine rice and water, then bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is fluffy.
- In a large pan, heat vegetable oil over medium heat. Add minced garlic, grated ginger, and chopped onion. Sauté until fragrant, about 2 minutes.
- Add the diced chicken to the pan and cook until browned, about 5-7 minutes.
- Add soy sauce and season with salt and pepper. Continue to cook until the chicken is cooked through, about 3-4 more minutes.
- Remove from heat and serve the chicken mixture over rice, topped with fresh mango slices.
Notes
Avoid overcooking the chicken to maintain a tender texture. Rinse the rice before cooking for a fluffier result.
