Ingredients

  • 1 cup jasmine rice
  • 2 cups water
  • 2 chicken breasts (about 1 pound), diced
  • 1 ripe mango, peeled and sliced
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 small onion, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a saucepan, combine jasmine rice and water, then bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is fluffy.
  2. In a large pan, heat vegetable oil over medium heat. Add minced garlic, grated ginger, and chopped onion. Sauté until fragrant, about 2 minutes.
  3. Add the diced chicken to the pan and cook until browned, about 5-7 minutes.
  4. Add soy sauce and season with salt and pepper. Continue to cook until the chicken is cooked through, about 3-4 more minutes.
  5. Remove from heat and serve the chicken mixture over rice, topped with fresh mango slices.

Notes

Avoid overcooking the chicken to maintain a tender texture. Rinse the rice before cooking for a fluffier result.
