Instructions
- Preheat a skillet over medium heat.
- In a small bowl, mix together the maple syrup and mustard to create the sauce.
- In the skillet, cook the eggs to your preference (scrambled or fried). Season with salt and pepper to taste.
- While the eggs are cooking, slice the croissants in half and toast them lightly until golden.
- Assemble the sandwich by placing cheese on the bottom half of the croissant, followed by the cooked eggs and optional bacon or sausage.
- Drizzle the maple mustard sauce over the fillings and top with the other half of the croissant.
