- 1 ¾ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup packed brown sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 cup maple syrup
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 cup chopped nuts (optional)
- For the Streusel:
- ½ cup flour
- ¼ cup brown sugar
- ¼ cup butter
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the maple syrup and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually mix the dry ingredients into the wet mixture until just combined.
- If using, gently fold in the chopped nuts to the batter.
- In a small bowl, mix together the streusel ingredients until crumbly.
- Pour half of the cake batter into the prepared pan. Sprinkle half of the streusel mixture on top. Add the remaining batter, then top with the remaining streusel.
- Bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
For best results, use fresh maple syrup. Customize spices as desired.
