Marry Me Tofu


Description

A creamy, flavorful vegan dish featuring crisp tofu, tender gnocchi, and a rich coconut-cashew sauce infused with sun-dried tomatoes and fresh basil.


Ingredients

  • 14 oz (400 g) extra-firm tofu, pressed and drained
  • 1 lb (450 g) store-bought potato gnocchi (or homemade)
  • 2 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • 1/3 cup (50 g) sun-dried tomatoes, chopped (oil-packed, drained)
  • 3/4 cup (180 ml) coconut cream or cashew cream
  • 3 tbsp nutritional yeast
  • 1/4 cup fresh basil leaves, chopped (plus extra for garnish)
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes, lemon zest

Instructions

  1. Press the tofu to remove excess moisture for at least 15 minutes, then cut into 1-inch cubes.
  2. Heat 1 tbsp of olive oil in a large skillet over medium-high heat and add tofu cubes. Cook until golden and crisp on all sides, about 8–10 minutes. Remove and set aside.
  3. In the same skillet, heat the remaining olive oil over medium heat, add minced garlic, and sauté until fragrant.
  4. Stir in chopped sun-dried tomatoes and cook for 2-3 minutes.
  5. Reduce heat and add coconut cream and nutritional yeast, stirring until combined. Simmer for 3-5 minutes until sauce thickens, adjusting consistency with water if necessary.
  6. Season the sauce with salt and pepper. Add chopped basil and stir to combine.
  7. Cook the gnocchi according to package instructions, then drain.
  8. Add cooked gnocchi and crispy tofu to the skillet with the sauce and toss to coat. Warm through for 1-2 minutes.
  9. Serve warm, garnished with extra basil and a sprinkle of nutritional yeast or red pepper flakes.

Notes

To lower sodium, use low-sodium sun-dried tomatoes. However, adjust seasoning gradually, as they can be salty.
