- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup heavy cream
- 8 ounces semisweet or dark chocolate, chopped
- Powdered sugar for dusting (optional)
- Fresh berries for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, mix the eggs, milk, vegetable oil, and vanilla extract until creamy.
- Gradually add the wet mixture to the dry ingredients and mix gently until combined.
- Stir in the boiling water until well blended.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- To make the ganache, heat the heavy cream until just before boiling, pour over chopped chocolate, let sit for 5 minutes, then stir until smooth.
- Once cooled, assemble the cake by layering the ganache between the two layers and pouring the remaining ganache over the top.
- Garnish with powdered sugar or fresh berries before serving.
Notes
Use room temperature ingredients for best texture and avoid overmixing. You can substitute cocoa powder with melted chocolate if desired.
