Matilda’s Chocolate Cake


Description

A rich and velvety chocolate cake that is perfect for any occasion, whether it’s a birthday or a cozy family gathering.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 8 ounces semisweet or dark chocolate, chopped
  • Powdered sugar for dusting (optional)
  • Fresh berries for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the eggs, milk, vegetable oil, and vanilla extract until creamy.
  4. Gradually add the wet mixture to the dry ingredients and mix gently until combined.
  5. Stir in the boiling water until well blended.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. To make the ganache, heat the heavy cream until just before boiling, pour over chopped chocolate, let sit for 5 minutes, then stir until smooth.
  10. Once cooled, assemble the cake by layering the ganache between the two layers and pouring the remaining ganache over the top.
  11. Garnish with powdered sugar or fresh berries before serving.

Notes

Use room temperature ingredients for best texture and avoid overmixing. You can substitute cocoa powder with melted chocolate if desired.
