- 4 flour tortillas
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato, diced
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- Black pepper, to taste
Instructions
- In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, thinly sliced red onion, and black pepper. Mix gently until evenly distributed.
- Lay one tortilla flat on a clean work surface. Place one-fourth of the filling mixture on half of the tortilla, spreading it evenly but leaving a small border. Fold the other half of the tortilla over the filling to form a semicircle. Repeat with remaining tortillas and filling.
- Heat a non-stick skillet over medium heat and add the tablespoon of olive oil, swirling to coat the pan.
- Carefully place a filled tortilla in the skillet. Cook for about 3–4 minutes until the bottom is golden brown and crisp.
- Flip carefully and cook another 3–4 minutes until the second side is golden and the cheeses are melted.
- Remove from heat, let rest 1 minute, then slice each quesadilla into wedges and serve warm.
Notes
For a lighter version, use whole-wheat tortillas or part-skim mozzarella. Pairs well with dips like tzatziki or hummus.
