- 2 cups all-purpose flour
- 1/2 cup unsalted butter, chilled and diced
- 1/4 cup sugar
- 1/4 teaspoon salt
- 6 to 8 tablespoons ice water
- 3 cups apples, peeled, cored, and sliced
- 1 tablespoon lemon juice
- 1/2 cup sugar (for filling)
- 1 teaspoon ground cinnamon
- 1 tablespoon all-purpose flour (for filling)
- 1 egg (for egg wash)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix flour, sugar, and salt. Cut in the diced butter until the mixture resembles coarse crumbs.
- Stir in enough ice water to form a dough. Wrap the dough in plastic wrap and chill for at least 4 hours or overnight.
- In another bowl, toss sliced apples with lemon juice, sugar, cinnamon, and flour until evenly coated.
- Roll out the chilled dough on a floured surface and cut into circles (about 5 inches in diameter).
- Fill each circle with the apple mixture, fold over the dough, and seal the edges by crimping with a fork.
- Place the mini pies on a baking sheet lined with parchment paper and brush with egg wash.
- Bake for about 25-30 minutes, or until golden brown.
Notes
Serve warm with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
