- 1 head cauliflower, cut into florets (about 1.5–2 pounds / 600–900 g)
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika (or sweet paprika)
- 1/2 teaspoon ground turmeric
- Salt and freshly ground black pepper, to taste
- 1/4 cup tahini (about 60 g)
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- Water, as needed for sauce consistency (start with 1–2 tablespoons)
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, combine the cauliflower florets, olive oil, cumin, paprika, turmeric, salt, and pepper. Toss until each floret is evenly coated.
- Spread the cauliflower in a single layer on the prepared baking sheet—don’t overcrowd, or it will steam instead of roast.
- Roast for about 25–30 minutes, flipping once halfway through, until florets are golden brown at the edges and tender when pierced with a fork.
- While the cauliflower roasts, whisk together the tahini, honey, and lemon juice in a bowl. Add 1–2 tablespoons water at a time until the sauce reaches a smooth, pourable consistency. Adjust salt and lemon as needed.
- Remove the cauliflower from the oven and transfer to a serving dish. Drizzle the tahini-honey sauce over the warm florets.

Notes
