No-Bake Orange Creamsicle Cheesecake

Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 16 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

Instructions

  1. In a bowl, mix the crushed graham crackers and melted butter until combined.
  2. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In another bowl, beat the softened cream cheese and powdered sugar until smooth.
  4. Add the orange juice, orange zest, and vanilla extract to the cream cheese mixture, mixing until well combined.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  7. Pour the filling over the crust and spread evenly with a spatula.
  8. Refrigerate for at least 4 hours, or until the cheesecake is set.
  9. Serve chilled, garnished with additional orange zest if desired.

Notes

For a gluten-free version, use gluten-free graham crackers. You can also substitute the orange juice with other citrus juices like lemon or lime.
