No-Bake Raspberry Coconut Balls

Delightful and easy no-bake raspberry coconut balls that are full of flavor and perfect for snacking.


Ingredients

  • 1 cup fresh raspberries
  • 1 cup shredded coconut
  • 1/2 cup almond flour
  • 1/4 cup maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, mash the raspberries with a fork until smooth.
  2. Add the shredded coconut, almond flour, maple syrup (or honey), vanilla extract, and a pinch of salt to the bowl.
  3. Mix the ingredients until well combined. Be careful not to overmix.
  4. Using your hands, form the mixture into small balls and place them on a baking sheet lined with parchment paper.
  5. Chill in the refrigerator for at least 30 minutes to firm up.
